As an inclusive restaurant, Saint Pierre goes the extra mile to cater to guests with different dietary preferences. Here’s a glimpse of the new Elegance menu crafted for vegetarian diners.
As a French fine dining establishment, Saint Pierre’s inclusive philosophy with regards to dietary requirements is thanks to Chef-Owner Emmanuel Stroobant’s personal experience as a practising vegetarian for over a decade. This has inspired the introduction of a fully vegetarian menu – Elegance – at the restaurant late last year; the perfect choice for vegetarian foodies. The menu can also be tweaked to accommodate the dietary requirements of vegan diners upon request.
“We have seen an increase in the number of guests who are opting for vegetarian menus at Saint Pierre. I wanted to create a thoughtfully crafted menu with our vegetarian guests in mind, using truffles as the central ingredient. We wanted vegetarian and vegan diners to feel equally welcome to enjoy a gastronomic meal with us. Of course, it helps that we have access to some truly exquisite produce. In fact, it might surprise some people to know that some of these vegetables are even more expensive than meat,” he says.
Due to the seasonal nature of the Elegance menu, the dishes vary depending on availability of ingredients. Some exquisite highlights that have featured on the menu so far include:
Brittany Purple Artichoke – Jerusalem artichoke tartare mixed with coconut milk-infused artichoke purée is topped with Brittany purple artichoke and black winter truffle carpaccio, and finished with a fig leaf oil (which tastes surprisingly like coconut).

Roscoff Onion – a stuffing of mushrooms, kohlrabi, apple and sunflower seeds fills a Roscoff onion, served alongside an onion and fennel seed emulsion.
Manjari Chocolate – a mousse made with Manjari and Jivara chocolate, accompanied by lychee gel, fresh Tulameen raspberries, lychee sorbet and spheres containing a liquid raspberry coulis, on a chocolate shortcrust base.
